Bacon Grilled Cheese with guacamole
Ingredients
- ASSEMBLE:
- SPREAD"
- 2 TBL salted butter, softened
- 4 slices country italian bread
- 4 TBL fresh or purchased guacamole
- 1 C shredded colby cheese
- 1 C pepper jack cheese
- 6 slices center-cut bacon, cooked

Preparation
Step 1
SPREAD butter on one side of each bread slice
place on cutting board, buttered side down
spread unbuttered sides w/ 1 Tbsp guacamole
ASSEMBLE sandwiches by placing 1/4 C colby & 1/4 C pepper jack on 2 of the slices
top them w/ bacon, remaining colby & pepper jack & remaining 2 slices of bread, buttered side up
COOK sandwiches in 12" skillet over med-high heat, 2 min
COVER skillet
reduce heat to med
cook until sandwich undersides are golden & cheese begins to melt, 2-3 min
FLIP sandwiches & press w/ spatula
cover skillet
cook until undeersides are golden & cheese melts, 2-3 min
flip sandwiches again
press w/ spatula
cover & cook 1 min. more
remove from skillet
let rest 1-2 min, before cutting in 1/2
