Banana Cake with Caramel-Praline Frosting

Ingredients

  • Frosting:
  • 1 Classic Yellow cake mix
  • 1/2 cup brown sugar
  • 1 tsp cinnamon
  • 1 cup water
  • 1/2 cup oil
  • 3 eggs
  • 1 cup mashed ripe bananas (2 or 3 bananas)
  • 2 tsp banana liqueur or 1 tsp extract (optional)
  • 1 stick butter
  • 1/2 cup light brown sugar
  • 1/2 cup dark brown sugar
  • 1/4 cup whole milk
  • 1 tsp vanilla extract
  • 2 cups powdered sugar
  • 1/2 cup to 1 cup chopped pecans (to taste)

Preparation

Step 1

Mix all ingredients for the cake and pour in greased & floured 9x13 cake pan. Bake at 350 degrees for 40-45 minutes.


Frosting:
Over medium heat, stir and cook butter & brown sugars until mixture comes to a boil; about 2 minutes. Add milk, stir and return to boil. Remove pan and add powdered sugar and vanilla extract. Beat with wooden spoon or whisk until smooth. Stir in pecans if desired (can omit pecans to make caramel frosting)Use frosting immediately, while still warm to frost cake. If frosting hardens while frosting cake, simply place pan over low heat and stir until softens.
