Dalvay Sticky Date Pudding with Toffee Sauce

Ingredients

  • Sauce:
  • 2 1/2 cups chopped dates (375 g)
  • 1 3/4 cups water
  • 4 tsp baking soda
  • 2 c. flour
  • 3 tsp bkg powder
  • 1/2 tsp ground ginger
  • 1/3 cup margarine
  • 1 1/3 cups sugar
  • 3 eggs
  • 3/4 cups unsalted butter
  • 2 cups lightly packed brown sugar
  • 1 cup whipping cream
  • 1/2 tsp vanilla

Preparation

Step 1

1. Preaheat oven to 350. Place dates and water in pan, cover and bring to a boil. Uncover and let simmer 5 min., stirring occasionally. Remove and stir in soda. Let stand 20 min.
2. Lightly butter 9x13 inch pan. Set aside roasting pan large enough to hold baking pan. Boil kettle of water and set aside.
3. Stir together flour, baking powder and ginger. Beat butter and sugar, add eggs one at a time, then flour mixture and dates. Turn into pan.
4. Place baking pan in roaster and fill roaster with boiled water until it's halfway up pan sides. Bake at 350 for 20 min., then reduce to 325 and bake another 35 min. Serve warm with sauce.
5. Sauce: Melt butter in medium pan over medium heat. Stir in brown sugar and cook, stirring occasionally, until sugar dissolves. Add cream and vanilla, increase heat to medium high and boil gently, uncovered and stirring occasionally, until slightly thickened, about 5 min.
6. Both can be made ahead and reheated before serving.
