MANHATTAN CLAM CHOWDER

Ingredients

  • 6 slices bacon
  • 1 cup sliced celery
  • 1 clove garlic, mmced
  • 1 tsp salt
  • Juice from 2 cans of baby clams
  • 2 cans of baby clams
  • 1 can tomato soup (OPTIONAL)
  • 1 can tomatoes
  • 1 cup water
  • 1 tsp dried thyme, crushed
  • 2 cup potatoes, pared and cubed
  • 4 small onions diced

Preparation

Step 1

In a large pan, saute bacon till crisp and then remove. Stir into bacon drippings and
brown : onions, celery, potatoes, garlic, thyme, and salt. Add clam juice and water and bring to a boil. Cover and simmer 10 to 20 minutes. Add clams, tomatoes and soup. Heat slowly stirring stirring several times. Serve with chopped bacon on top.
