Ingredients

  • Fish:
  • 1/3 cup rice vinegar
  • 1/4 cup minced shallots
  • 2 tbsp brown sugar
  • 2 tbsp minced fresh ginger
  • 1 tbsp minced garlic (3 cloves)
  • 3 tbsp soy sauce
  • 4 6 oz salmon fillets, skinned
  • Ginger-Garlic Mayo:
  • 2 tbsp mayo
  • 2 tbsp plain yogurt
  • 1 tsp wasabi paste
  • 3/4 tsp grated fresh ginger
  • 1/2 tsp rice vinegar
  • 1 garlic clove, minced
  • Remaining Ingredients:
  • 1 tbsp dark sesame oil
  • 4 cups baby spinach
  • 8 slices ciabatta bread, toasted

Step 1

To prepare fish, combine 1st 7 ing, place 3/4 cup shallot mixture in lg ziploc bag, set remaining aside. Add fish to bag, marinate in fridge 30 min, turning once. To prepare mayo, combine all mayo ing. Preheat broiler, remove fish from bag, discard shallot mix, broil fish 10 min on broiler pan until fish flakes with fork. Combine reserved shallot mix with dark sesame oil in lg bowl, add spinach, toss well. Spread 1 tbsp mayo on bread slices, top with fish and spinach, then remaining bread slice....

Serve with sliced cucumbers and red onions tossed with seasoned rice vinegar and blk pepper....
