Butternut Squash Lasagne

Ingredients

  • 1 1 1/2 lb butternut squash
  • peeled, cubed and steamed until soft
  • puree with salt to taste
  • 1/8 c butter
  • 1/8 c flour
  • 2 c milk
  • 1/2 c fresh basil
  • No bake lasagne noodles for 6
  • 1 1/4 c mozzarella cheese

Preparation

Step 1

Grease 8X8" pan.

Melt butter; stir in flour, cook 2 minutes on low. Stir in milk and cook until thick. Blend 1/2 sauce with basil. Stir in remaining sauce and pinch of nutmeg, if desired.

Layer in pan in order:
Sauce
Noodles
Squash
cheese

Repeat to make 3 layers.
Bake 40 minutes covered. Uncover and add more mozzarella cheese and bake 15 minutes more.
