Ingredients
- 4 ears fresh corn
- 1/4 c mayonnaise
- 1/8 tes cayenne pepper
- 3/4 c shredded cotijo cheese
- Lime wedges

Preparation
Step 1
Heat BBQ.
Soak cleaned corn (in husks) in cold water for 10 minutes (weigh down to submerge)
Drain corn and grill on rack for 10 minutes. Shuck corn and grill until kernels are browned in spots.
Mix mayonnaise and cayenne powder in bowl. Brush on corn, sprinkle with cheese and squeeze lime juice over corn.
