Salt and pepper prime rib (works best with 4-5 lb) Put in roasting pan uncovered. Cook one hour only. Turn off oven. DO NOT OPEN DOOR.

THEN 45 minutes before serving, turn oven to 300 for Rare,
For medium rare - 50 minutes
For well done - 55 minutes.
