Spicy Hoisin Salmon

Ingredients
- 1/4 cup hoisin sauce
- 2 tbsp reduced-sodium soy sauce
- 2 tsp rice vinegar
- 1/2 tsp ground ginger
- 1/4 tsp red pepper flakes
- 4 pieces of salmon fillet, about 6 oz each
- 2 scallions, trimmed and thinly sliced

Preparation
Step 1
Heat oven to 450 degrees. Coat a baking dish with nonstick cooking spray.
In a small dish, stir together the hoisin, soy sauce, vinegar, ginger and red pepper flakes. Place salmon in prepared dish and spread top of each fillet with half of the hoisin mixture.
Roast at 450 degrees for 10 minutes. Spread remaining hoisin mixture over the salmon and top with the scallions. Roast for an additional 5 minutes.
