Candied Bacon deviled eggs

  • 6 boiled eggs sliced in half lengthwise
  • mustard spiked mayonnaise to taste
  • pinch cayenne pepper
  • season salt to taste
  • pickle relish to taste
  • 6 strips thick candied bacon
  • (to candy, lay bacon on rack over sheet pan and sprinkle with brown sugar mixed with cinnamon and cayenne pepper. Broil. Turn and repeat on other side, broiling until bacon is crisp. Cut the bacon crosswise to make crumbles.)

Step 1

Mash egg yolks with the back of a fork. Add half the candied bacon crumbles. Fold in wet ingredients gradually until a consistency is obtained that holds its shape. Add salt and cayenne pepper to taste. Spoon mixture into a ziploc plastic bag. Cut off a corner and pipe mixture into egg white halves. Garnish top with remaining candied bacon chips.
