Ingredients
- 4 large potatoes
- 1 cup salsa
- 1 1/2 cup sour cream
- 1/2 cup shredded monterey jack cheese
- 2 tbsp cilantro, chopped
- 1 tbsp black olives, chopped

Preparation
Step 1
Preheat oven to 425*.
Scrub potatoes. Pat dry. Pierce potatoes several times. Bake 1 hour. Remove potatoes, reduce heat to 350*.
Slice off tops of potatoes. Scoop put insides, keeping the shell intact. Mash potatoes; stir in salsa and 1 cup sour cream. Spoon potato mix evenly into shells. Sprinkle with cheese.
Place on baking sheet. Bake 20 minutes. Top with remaining ingredients.
