Ingredients

  • 1 c all purpose flour or 1/2 c each whole wheat and all purpose)
  • 1 T baking powder
  • 1/4 c sugar (less?)
  • 1/2 t salt
  • 1/2 t cinnamon
  • 1/2 t nutmeg
  • 1/2 c nuts
  • 2 c bran flakes cereal
  • 2/3 c milk - lowfat okay
  • 2/3 c mashed ripe bananas (about 2)
  • 2 egg whites (or one egg)
  • 1/4 c canola oil
  • 1/2 t vanilla

Preparation

Step 1

Stir together flour, baking powder, sugar, salt and spices and set aside. Stir together bran flakes, milk, and bananas in mixing bowl. Let stand 1-2 minutes for cereal to soften. Beat egg whites until foamy and add to cereal mixture along with oil and vanilla. Beat well and add dry ingredients and nuts, stirring only until combined.

Portion batter evenly into 12 greased muffin cups. Bake at 400 degrees 25 minutes or until lightly browned. Can also make 24 mini muffins.
