Ingredients
- 4 cups dried apricots, finely diced
- 2 tsp. garam masala
- 2 1/2 cups light brown sugar
- Scant 4 cups apple cider vinegar
- 2 tsp. fresh ginger, grated
- 1 1/2 tsp. salt
- 1 cup sultana raisins
- Scant 4 cups water

Step 1
Put all ingredients together in a sauce pan and stir well to mix. Bring to a boil, then simmer for 30-35 minutes, stirring occasionally.
When the chutney becomes syrupy, remove from heat. Leave to cool, then ladle into hot sterilized jars and cover.
Keep refrigerated after opening.
