Broccoli Rabe Panini with Mozzarella

  • 1 lb. broccoli rabe
  • 1 T. butter
  • 1 T. olive oil
  • 1/2 medium onion, diced small
  • 1 med. garlic clove, minced
  • Pinch of red pepper flakes
  • 4 slices of ciabatta bread
  • 1/4 lb. mozzarella, thinly sliced

Step 1

1. Remove and discard broccoli rabe's heavy stems. Cut the leaves into 1/2 inch ribbons. Leave any small florets whole, but halve any larger ones.

2. Heat the butter and 1 T. olive oil in a large saute pan over medium heat. Add the onion and a pinch of slat and pepper, and cook until onion is a bit brown at the edges, about 5 to 7 minutes. Increase the heat to medium-high and add the prepared rabe, garlic, and pepper flakes, and saute until the greens are tender, about 4 minutes. Season with salt to taste.

3. Heat a well-seasoned grill pan over moderate heat or a panini press. Brush one side of each slice of bread with olive oil. Arrange one piece of bread, oiled side down, on pan. Spread with half of rabe mixture and mozzarella slices. Arrange second slice of bread on top. Lower panini press or pan onto top of sandwich and cook for 4 to 8 minutes until nicely toasted. Flip sandwich and grill on other side for 3 to 5 minutes.

4. Cut sandwiches in half and eat while hot.
