Mini Stuffed Potatoes

Ingredients
- 12 small potatoes
- 1 T oil
- 1/4 plus 1/8 tsp. salt
- 6 T sour cream (can use low fat)
- 2 oz. crumbled Gorgonzola cheese
- 1 bunch chives
- 4 slices bacon (may use turkey bacon) cooked and chopped

Preparation
Step 1
heat oven to 400 degrees. Trim a small bit off each potato so that they lay flat. Toss with oil and place on baking sheet (cut side down). Sprinkle with 1/4 tsp. salt Bake for 25-30 minutes or until tender. Cool slightly.
In small bowl, blend remaining 1/8 tsp. salt, sour cream, cheese and half the chives. Slice off top of each potato and scoop out 1 T or flesh.(reserve for another use) Stuff each potato with a generous tablespoon of the sour cream mixture. Sprinkle with bacon bitsand remaining chives. Serve slightly warm or room temperature.
