Fresh Cranberry Sauce

Ingredients
- 1 lb. fresh cranberries
- 1 orange, zest and juice
- 1 C water
- 1 C raw agave nectar

Preparation
Step 1
Place cranberries, orange juice, orange zest and water in a saucepan and cover. Cook over high heat until water boils. Reduce heat to medium and cook until berries burst and sauce thickens, about 30 to 40 minutes. Stir occasionally. Add agave and continue cooking over high heat until sauce boils, about 1 to 2 minutes. Turn heat down to low, simmer for 5 minutes and continue to stir. Remove from heat and cool.
Variation: Add minced ginger, candied or fresh, with the agave.
