Grapes Stuffed with Chevre

Stuffed Grapes are wonderful. You must make them with large globe grapes, also called holiday grapes, that start appearing in the market in fall.

Ingredients
- 24 Globe grapes
- 1/4 cup chevre, at room temperature
- 2 to 3 tablespoons cream
- 1/4 cup pistachios, chopped (toast them if you wish before chopping)

Preparation
Step 1
Cut a small slice off the bottom of each grape so it will stand upright. Cut off about the top 1/4" of each grape and scoop out the flesh with a melon baller.
In a small bowl, mash the goat cheese with enough cream to make a smooth, icing-textured mixture. Spoon into a small piping bag, or resealable bag with the corner tip cut off. Pipe some of the goat cheese mixture into each grape and then sprinkle the tops with some chopped pistachios.
If you don't like goat cheese, fill with plain yogurt topped with pistachios.
