CHERRY CHEESECAKE PIE

Ingredients

  • 15 oz. ready to bake crusts
  • 1/2 cup sugar
  • 1 Tbs. cornstarch
  • 2 (8 oz.) cream cheese
  • 1 egg
  • 21 oz. cherry pie filling
  • 1 egg white

Step 1

Heat oven to 350*.

Fit 1 crust in pie plate. Cut remaining crust into strips. Cover with plastic wrap and refrigerate.

Mix sugar and cornstarch in a medium bowl. Add cream cheese and beat with mixer on medium speed until smooth. On low speed beat in egg just until blended.

Spread batter evenly in crust. Spoon pie filling evenly over top. Beat egg white with fork until foamy. Brush on strips. Arrange 8 strips across filling. Place 8 more strips diagonally to form lattice. Trim and press ends to bottom crust.

Bake 50-60 minutes until crust is golden brown and cherries bubble. Remove to wire rack to cool.
