Ingredients
- 2 cups flour
- 2 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1 tsp salt
- 1/3 cup honey
- 1 egg, beaten
- 1 cup sour cream
- 1 cup fresh, sliced rhubarb (sliced 1/4 in thick)
- Topping
- 1/4 cup sugar
- 1/2 tsp cinnamon
- 2 tbs butter, softened

Preparation
Step 1
Preheat oven to 350 degrees; Butter 8-inch baking dish or casserole.
In large bowl, combine flour, baking powder, baking soda and salt. Add honey, egg and sour cream and stir until just combined; stir in rhubarb.
Pour batter into prepared dish.
In small bowl mix together sugar, cinnamon and butter. Sprinkle over batter in pan, filing in any bare spots with additional sugar.
Bake for 35 minutes or until toothpick inserted in center comes out clean. Cool completely and serve with cream or ice cream.
