Step 1
Rinse salmon and cut into 4 equal portions and place into a quart or gallon size Ziploc bag, depending on how much salmon you have. Add mustard slather, seal bag and work with hands to coat salmon thoroughly on all sides, add more mustard if needed. Can be cooked immediately or refrigerate for up to 1 hour before cooking.
Preheat oven to 375 - line an oven safe baking dish large enough to hold the salmon with tin foil. Place the salmon skin side down on the foil and cook for 10 - 12 minutes depending on the thickness of the fish. Finish the salmon under the broiler for an additional 4 - 5 minutes to caramelize the slather and until the salmon flakes easily.
Can also be grilled on the BBQ using a doubled piece of tin foil under each filet, skin side down, grill for 10 - 15 minutes or until salmon is done and flakes easily. This method doesn't caramelize the slather as much as the broiler, but it is still good.
