Zest & Juice from 1 Lime
lb. Sweet Red Cherries, washed & pitted
Tbsp. Fresh Mint, finely chopped
In a sm. pot, bring the sugar & water to a boil. Boil hard for 2 min; remove from heat. Stir in rose, lime zest & juice; set aside. Place cherries in a blender & add the sugar-lime mixture. Puree till smooth, about 1 min. Pour mixture through a sieve, pressing out as much juice as possible & discarding the solids that remain. Sir in mint & pour the mixture into a 9"x13" freezer-proof dish. Freeze for an hour, when ice crystals will have formed around the edges of container. Stir with a fork to distribute crystals evenly. Stir again every 30 min. till the mixture is frozen through & grainy, about 4 hrs. Serve in glasses topped with a Mascarpone/Whipped cream mixture & a sprig of fresh mint.
