Baked Sweet Potato Gratin

Ingredients

  • 3 medium sweet potatoes
  • 2 ounces grated Gruyere or Jarlsberg cheese (1/2 cup)
  • 1/2 cup thinly sliced Vidalia onion or sweet onion
  • 1 tablespoon minced garlic
  • 1 tablespoon olive oil
  • salt and pepper
  • heavy duty aluminum foil
  • parchment paper

Preparation

Step 1

For each portion tear aluminum foil into a 12 inch square piece. Line with a similar sized piece of parchment.

Scrub sweet potatoes and cut into 1/4 inch slices. Arrange 5-6 slices per packet. Sprinkle each with grated cheese, onion and garlic.

Drizzle a little olive oil over top and season with salt and pepper. Fold, seal and grill until done. (Or place packets on a baking sheet and bake at 400 degrees for 40 minutes.
