Blue Cheese Dip w/Caramelized Shallots

Ingredients

  • 2 tablespoons olive oil
  • 10 shallots, thinly sliced (about 2 cups)
  • 2 cups crumbled creamy mild blue cheese (about 5 ounces)
  • I cup sour cream
  • 4 Tbsp. chopped chives, divided
  • Toasted French bread baguette slices
  • Assorted crudites

Preparation

Step 1

Heat oil in heavy medium skillet over medium heat.
Add shallots and saute until deep golden brown, stirring
occasionally, about 20 minutes.
Cool.
Blend blue cheese and sour cream in processor until
smooth.
Season to taste with salt and pepper.
Transfer mixture to medium bowl.
Mix in shallots and 2 tablespoons chives.
Cover and refrigerate at least 2 hours.

DO AHEAD
Can be made 1 day ahead. Keep refrigerated.

Sprinkle dip with remaining 2 tablespoons chives.
Serve with toasted bread and crudites.
