Ingredients

  • Crumb Topping:
  • 1 C. flour
  • 1 1/2 C. rolled oats
  • 1 C. brown sugar
  • 1/2 C. melted butter
  • 1 tsp. cinnamon
  • Fruit Filling:
  • 4 C. diced rhubarb
  • 1 C. sugar
  • 1 tsp. vanilla
  • 2 TBSP cornstarch
  • 1 C. water

Preparation

Step 1

Mix tipping until crumbly. Press half of crumbs in a greased 9-inch pan. Cover with rhubarb. In a small saucepan combine sugar, cornstarch, water and vanilla. Bring to a boil stirring until thick and clear. Pour over rhubarb. Top with remaining crumbs. Bake 350* for 1 hour.


* Can use other fruits too.
