Dripping Au Jus Beef Sandwich (Crockpot)

Ingredients

  • 2 pound rump roast
  • 1 - 1/2 cups water
  • 2 teaspoons garlic, minced
  • 1- 1/2 tablespoons Dale's marinade seasoning
  • 1 tablespoon dried onion, minced
  • salt & pepper
  • 1 package dry au jus mix
  • 1 large white onion, sliced
  • Peperoncini's, sliced
  • French demi baguettes

Step 1

Place water, garlic and dale's marinade in the crockpot and stir. Place roast in the crockpot and sprinkle salt, pepper and dried onions over it. Place lid on the crockpot and cook on low 8-10 hours. (I have cooked from frozen before and that takes 16 hours on low)

Once the roast is tender, remove from the crockpot and shred with a fork. Meanwhile, stir in the au jus mix using all the juice that is left in the crockpot. Then place the shredded beef back in the crockpot and set to warm until ready to serve.

When you are close to ready to serve you want to prepare the following:

Place the French baguettes in a 375* for 8 minutes. Then remove and slice in half and butter each half of the bread and then brown in a frying pan. (like making a grilled cheese)

Place the sliced onions with a small amount of olive oil and sauté until tender.

Now you are ready to assemble the sandwich. Place the shredded beef, sautéed onions, and some sliced peperoncinis. (a slice of pepper jack cheese is quite yummy at this point as well!)

Serve with a dish of au jus sauce for dipping!
