Make Ahead Mashed Potatoes

Ingredients

  • 5 lbs. Yukon Gold potatoes, peeled and cubed
  • 6 oz. Cream Cheese
  • 8 oz. sour cream
  • 1/2 stick of butter
  • 2 Peeled cloves of garlic
  • ground black pepper to taste

Preparation

Step 1

1. Place potatoes and garlic in a large pot of lightly salted water. Bring to a boil, and cook until tender, about 15 minutes. Rinse with hot water and drain.
2. Take hot pot from potatoes and add cream cheese, sour cream, and butter - stir until melted
3. Add mixture to potatoes and mash
4. Transfer to a large casserole dish and refrigerate over night
5.. When ready to cook, preheat oven to 325
6. Remove potatoes from the refrigerator and let stand at room temp for about 30 minutes before cooking
7. Cover and bake for 50 minutes in the preheated oven
8. Or put in crock pot on low for approx. 3 hours before serving
