Marinated Linguine

Great in place of potato salad for a summer pot luck. Must be prepared ahead of time.

Ingredients

  • 1

    lb. linguine (or green noodles)

  • 6

    T white wine vinegar

  • 14

    T olive or vegetable oil (about ⅔ C)

  • 4

    T fresh parsley, chopped

  • 2

    t basil

  • ¼

    t black pepper

  • 1

    t salt

  • ½

    t dry mustard

  • ½

    lb. fresh mushrooms, sliced

  • ½

    C scallions with tops, chopped

  • ½

    C Parmesan cheese, grated

  • 1

    clove garlic, crushed

Directions

Cook linguine according to package directions. Drain and rinse in cold water. Mix all other ingredients together and add linguine. Toss until mixed thoroughly. Chill for 24 hours.
