Ingredients

  • 1 pkg. (1/4 oz.) active dry yeast
  • 1/4 C warm water
  • 1 3/4 C warm fat-free milk
  • 1/3 C butter softened
  • 1/4 C mashed potatoes (without added milk and butter)
  • 3 Tbs. sugar
  • 1 1/2 tsp. salt
  • 1 1/2 C whole wheat flour
  • 3 1/2 to 4 C all purpose flour

Step 1

1. dissolve yeast in warm water. Add the milk, butter, potatoes, sugar and salt, whole wheat flour and 1/2 C all purpose flour. Beat until smooth. Stir in enough remaining flour to form a firm dough.

2. Turn onto a slightly floured surface; knead until smooth and elastic, about 6-8 min. Place in a bowl coated with cooking spray turning once to coat the top. Cover and let rise until doubled.

3. PUnch dough down, and turn onto floured surface; shape into loaf pan coated with cooking spray and let rise.

4. Bake for 40-45 min. at 350.
