Ingredients

  • 1/4 tsp pepper
  • Pinch nutmeg
  • 1/2 tsp minced garlic
  • 3 Tbsp butter
  • 1/2 tsp thyme
  • 1 c onions
  • 1/2 tsp salt
  • 3 Tbsp flour
  • 3 c chicken stock
  • 1 pkg frozen broccoli
  • 1/2 c whipping cream
  • 1 1/4 c shredded Cheddar

Preparation

Step 1

elt butter over medium heat
Add onions,salt,pepper,nutmeg and cook,stirring,until soft 3 min
Add the garlic and thyme cook 20 sec
Add flour and cook,stirring,until mixture is well-blended and smels fragrant,2 min
Slowly add chicken stock,whisking constantly,and bring to a boil
Reduce heat and simmer until thickened,about 5 min
Add broccoli and cook ,stirring,until tender,10 mi n
Remove the ot from the stove and puree with immersion blender
Add the cream and bring to bare simmer to heat through
Add cheese and cook over low heat,stirring,until melted
Add 2 Tbsp butter,stirring to blend
Ladle soup into bowls and sprinkle with croutons
