Ingredients

  • Topping:
  • 2 cups mashed sweet potatoes
  • 2 eggs (whipped in milk)
  • 1/2 stick margarine
  • 1/2 cup milk
  • 1/4 cup sugar
  • 1 teaspoon cinnamon
  • 3/4 cup cornflakes, crushed
  • 3/4 cup pecans, coarsely chopped
  • 1/2 cup brown sugar
  • 1/2 stick margarine

Preparation

Step 1

Peel, cube, and boil sweet potatoes, then mash. Mix all ingredients and place in casserole. Bake at 400 degrees for 20 minutes.

Remove from oven and add topping consisting of:
3/4 cup crushed cornflakes (or substitute uncooked oatmeal)
3/4 cup coarsely chopped pecans
1/2 brown sugar
1/2 stick margarine

Mix all ingredients and place on top of souffle. Bake at 400 degrees for an additional 10 minutes.
