    lb ground beef

  • 2

    C chopped sweet yellow, red and/or green peppers

  • 1

    small onion, chopped

  • 3

    garlic cloves, minced

  • 2

    small potatoes, peeled and cut into 3/4-in cubes

  • 2

    medium tomatoes, chopped

  • 1

    can (8 oz) tomato sauce

  • 2/3

    C chopped pitted green olives

  • 1/2

    C sliced fresh mushrooms

  • 1/2

    C dry red wine or beef broth

  • 1

    Tbs Louisiana style hot sauce

  • 1

    Tbs Worcestershire sauce

  • 1.5

    tsp reduced sodium soy sauce

  • 1

    tsp pepper

  • 1/2

    tsp salt

  • 1/2

    tsp dried oregano

  • 1/4

    tsp cajun seasoning

  • hot cooked rice

Directions

In a dutch oven, cook the beef, peppers, onion and garlic over medium heat until meat is no longer pink; drain. Add the potatoes, tomatoes, tomato sauce, olives, mushrooms, red wine/broth and seasonings. Bring to a boil. Reduce heat; simmer, uncovered, for 30-35 minutes or until potatoes are tender. Serve with rice.
