Asian Beef with Chile Sauce

Ingredients
- Marinade:
- 1 pound beef rib-eye or lean flank steak
- Hot basil and Chilli Sauce (see below)
- 1 ounce Crispy Fried basil leaves (see note) to serve
- 2 tablespoons soy sauce
- 1 tablespoon fish sauce
- 1 teaspoon sugar
- 1 teaspoon freshly ground black pepper
- Hot basil and Chilli Sauce:
- 1 tablespoon oil
- 3 cloves garlic, minced
- 2 red chillies, sliced
- 1 tablespoon sugar
- 1 tablespoon oyster sauce
- 1 tablespoon fish sauce
- 1 tablespoon soy sauce
- 1 teaspoon white pepper
- 10 basil leaves

How to make it
First make the Marinade by combining the soy sauce, fish sauce, sugar and black pepper in a bowl.
Mix well until the sugar is dissolved.
Pour the Marinade over the beef and marinate for about 1 hour.
Grill the beef on a charcoal or pan grill until browned on the outside but still pink and moist on the inside.
This should take 5 to 10 minutes.
Set aside to cool.
Cut the beef into thin slices and place on a serving platter.
Pour the Hot Basil and Chilli Sauce over and serve with Crispy Fried Basil Leaves
CRISPY FRIED BASIL : To make the Crispy Fried Basil Leaves, stir-fry 8 to 10 thinly sliced or whole basil leaves in several tablespoons of hot oil over medium heat for 1 to 2 minutes, stirring constantly, until crispy and fragrant.
Remove with a slotted spoon and drain the excess oil on paper towels.
