Cheesy Baked Squash

Ingredients

  • Olive oil or butter
  • Onion, diced
  • 1 lb. summer squash, diced
  • Pepper to taste
  • 2 oz. cream cheese, cut into small cubes.
  • 1/2 cup shredded cheddar cheese

Preparation

Step 1

Heat oven to 350.

In a skillet heat enough oil or butter to coat . Add onion and cook until transparent.

Add squash and cook a few minutes.

Transfer to a small baking dish. Season to taste with pepper.

Dot with cream cheese, then sprinkle with shredded cheese.

Bake 10 or 15 minutes until cheeses are melted.
