Easy Healthier Banana Bread

Adapted from a 1967 recipe in Home and Gardens New Cookbook that was given away free with the purchase of Dash detergent.

Ingredients

  • 1/2 cup of virgin coconut oil; cooled so its thickened and acts like butter.
  • 3/4 cup of Raw sugar
  • 3 mashed ripe bananas (1.5 cups)
  • 2 beaten eggs
  • 1.5 cups whole wheat flour
  • 1 tsp baking powder
  • 1 tsp sea salt
  • 3/4 cup of finely chopped walnuts, macadamias...or whatever your favorite nut is.

Step 1

Cream together the coconut oil and sugar. Add the mashed bananas and the beaten eggs. Sift your dry ingredients together separately (not including the nuts)then stir them together with everything else. Mix just until the flour is fully moistened. Fold in the nuts. Pour into a well greased (use coconut oil) loaf pan. Bake at 300 degrees for 1 to 1.15 hours or until a toothpick poked in the middle comes out clean. Cool before slicing. Freezes well and is terrific toasted.
