Grilled Beef & Vegetable Kabobs
- 1/4 cup Olive Oil
- 3 tbsp red wine vinegar
- 1 tsp fresh lemon juice
- 2 tsp garlic powder
- 3/4 tsp salt
- 1/2 tsp ground pepper
- 1 1/2 lb boneless beef top sirloin, cut into 1-inch cubes
- 2 medium red onions, peeled and cut into 8 wedges
- 4 large bell peppers (red, yellow, and green) cored and cut into 1-inch squares
- 1 fresh pineapple, cleaned and cut into chunks
- No-Stick cooking spray
Mix vinegqr, lemon juice, garlic powder, salt, pepper, and olive oil in a small bowl. Marinate beef, vegetables, and pineapple in the mixture. Refrigerate for at least 5 hours.
Spray grill grates with non-stick cooking spray. Thread meat onto skewers alternating with vegetables and pineapple. Season generously with salt and pepper.
Grill kabobs for about 8 minutes.
