Ingredients

  • 2-3 pounds lean stew meat, cut into 1-inch pieces
  • 1 quart beef broth
  • 1 teaspoon celery salt
  • 1/2 teaspoon thyme
  • 1/2 teaspoon basil
  • 1 teaspoon parsley
  • 1 teaspoon marjoram
  • 2 cloves garlic, minced
  • 1 medium yellow onion, chopped
  • 1 cup carrots, chopped
  • 1 cup celery, chopped
  • 2 cups sweet potatoes, peeled and diced
  • 1 16-oz can diced tomatoes

Step 1

Place the stew meat, beef broth, celery salt, and herbs in your slow cooker.

Mince the garlic, and evenly chop the onion, carrots and celery. Add them to the slow cooker.

Cover and cook on low for four to six hours.

Peel and dice the sweet potato. Add it to the slow cooker after the first four to six hours of cooking.

Add the diced tomatoes, cover, and cook on high for another two to three hours.
