Ingredients
- 2 Tbs Butter
- 1 ea shallots
- 1 c sake
- 2 Tbs lemon juice
- 2 Tbs Szechuan peppercorns
- 1 tps ginger crushed
- 1 c fish stock
- 1/2 c cream
Details
Preparation
Step 1
Sauté shallots in butter
Add sake, lemon juice, Szechuan peppercorns, ginger and fish stock
Reduce by half
Add cream
Reduce to the appropriate thickness
Strain
