Ingredients

  • 2 Sweet potatoes
  • 1/4 cup 1% milk
  • 1 large egg separated
  • 4 tsp sugar
  • 1/2 tsp ginger
  • 1/4 tsp salt
  • 1/8 tsp cinnamon
  • 1/4 cup flour
  • 1/2 tsp baking powder

Preparation

Step 1

Oven to 425 degrees. Line baking sheet with foil.
Pierce potatoes with fork. Bake 40 minutes. When cool, peel skin. Mash potatoes. Whisk in milk, egg yolk, sugar, ginger, salt and cinnamon. Combine flour and baking powder in bowl. Electric mixer on medium. Beat egg white to soft peaks. Gently fold in potato mixture. Sprinkle flour mixture over the top and fold til smooth.

Spray large skillet, heat on medium. Drop batter into skillet by round T. flatten slightly to form patties. Cook til golden. Set aside 2 minutes. Serve immediately.
