Chicken, spinach and cheese

• 1 lb skinless chicken breast
• 4 oz pepper jack cheese shredded You can use up to 6 oz
• 1 cup frozen or fresh spinach
• 2 tbsp. olive oil
• 1 tbsp. Italian bread crumbs
• salt
• pepper

Preparation

Step 1

Preheat 350
Flatten chicken
In med bowl combine cheese spinach salt and pepper
Small bowl bread crumbs
Spoon 1/4 cup of the spinach onto chicken breast. Roll tightly and fasten with toothpicks. Brush with olive oil sprinkle crumbs and remaining spinach and cheese on top
Place seam side up onto tin foil lined bAKING SHEET bAKE 35 TO 40 MIN
