Spinach Balls

Ingredients
- 2- 10oz packages chopped spinach (some pkgs are 9 oz...doesn't have to be exact)
- 1/3 C (6T) Butter melted
- 1 Cup stuffing or bread crumbs (I pref bread crumbs when making for Sam for consistency)
- 1 Med onion chopped fine
- 3 eggs beaten
- 8 oz Water chestnuts chopped fine
- 1/3 C Parmesan Cheese
- 1 clove garlic minced
- 1/2 tsp thyme
- 1/4 tsp Tabasco or Texas Pete
- 1/2 tsp pepper
- 1 tsp salt (not really necessary)
- 1 tsp lemon juice

Preparation
Step 1
Thaw the spinach and let drain. Try to remove as much liquid as possible from the spinach
Mix all ingredients in a bowl. If the mixture is too wet, add additional bread crumbs or Parmesan cheese
Form 1 inch balls and place on a cookie sheet that has been covered in cooking spray
Cook at 350 for about 30 minutes (may require more or less based on size of ball and wetness)
Spinach balls are done when they begin to brown on edges
