beets and feta salad

  • 3 o4 4 large beets
  • olive oil
  • white wine vineager or lemon juice
  • salt
  • feta cheese

Step 1

1. preheat over to 375. trim and wash b eets. place on a large piece of aluminum foil, drizzle with 1 tsp olive oil, waqrap and place on a baking sheet. bake until beets are tender when pierced with a fork. 30 45 mins. cooll about 20 minutes

2. peel beets and cut into 1/2 inch slices an add 1 tbsp olive oil, 2 tsp white wine vineager, 1/4 tsp of salt and 4 oz of feta.
