- Prime Rib seasoning
- Brown sugar
- Salt
- Pepper

Step 1
Rub entire butt down with Prime Rib Seasoning, salt, pepper and a generous amount of brown sugar. Be sure and massage seasonings into the meat.
Expose meat to smoke for 6 hours.
Smoker temp needs to be 200 to 235 degrees.
Smoke meat for 1 1/2 hour per lb.
Meat is done when the internal temperature reaches 180 to 190 degrees.
