Ingredients

  • 1 lb cod filets
  • 2 tbs fresh parsley
  • 2 ribs celery
  • 1 small onion
  • 2 tbs olive oil
  • 1 1/2 14 oz cans diced tomatoes
  • 2 medium potatos, diced
  • 1 tbs capers
  • 6-8 large scilian green olives
  • 3 bay leaves

Preparation

Step 1

-cook onion, celery, parsley and tomatoes in olive oil until soft
-add potatos, olives, capers and bay leaves
-simmer for 10 minutes until potatos are half cooked
-add washed cod and simmer until potatos are fully cooked
-before serving remove bay leaves
-best to cook early in day or day before serving
