Raspberry Almond Bars

  • 1 c. flour
  • 3/4 c. quick cooking oats
  • 1/2 c. sugar
  • 1/2 c. butter or margarine, soft
  • 1/2 t. almond extract
  • 1/2 c. red raspberry preserves
  • 1/3 c. sliced almonds



Step 1

Heat oven to 350º. Line an 8- or 9-inch square baking pan with foil. Lightly grease foil. Mix flour, oats and sugar in a large bowl. Add butter and cut in with pastry blender or 2 knives until mixture resembles coarse crumbs. Stir in almond extract until blended. Place 1 cup oat mixture in bowl and mix in slice almonds; set aside. Press remainder evenly in baking pan. Spread preserves over crust to within ¼” from edge. Sprinkle reserved crumb mixture evenly over preserves, then press down gently. Bake 25 – 30 minutes or until edges are golden. Cool in pan on rack. Lift foil by ends to cutting board. Cut into bars. Makes 24.
