Cuban Slow Cooked Pork

Ingredients
- cup Cuban Orange-Carrot Marinade:
- 1 pork loin, bonelesss country rib or shoulder cut
- 1/2 cup Kagome orange Carrot Blossom
- 1/2 cup olive oil
- 1/4 cup fresh lime juice
- 2 Tblsp garlic cloves, minced
- 1 1/2 tsp ground cumin
- 1 tsp salt
- 1/4-1/2 tsp black pepper, freshly ground

Prep Time: 210 minutes
Cook Time: 150 minutes
Use 1 cup of Cuban Orange-Carrot Marinade. Place pork (loin, boneless country rib or shoulder cut) in non-reactive bowl marinade . Baste pork with sauce until completely coated. Marinade under refrigeration for at least 3 hours (or overnight). Pre-heat grill to 400ºF and oven to 250-300ºF. Grill pork on all sides enough to leave grill marks. Remove from grill and put into oven safe baking pan. Add marinade to pan and cover with baking pan lid or foil. Bake pork until done and meat is cooked and easily shreds (2 hours+). Serve over rice, using sauce remaining in oven pan as gravy or in cold or hot sandwiches.
