Ingredients

  • 1 lb frozen spinach
  • 1 package fresh spinach
  • 2 cloves of garlic
  • 1 bunch of italian parsley
  • 32 oz whole milk ricotta
  • 16 oz whole milk mozzarella, shredded
  • 6 oz parmesan cheese
  • 1 tb nutmeg
  • 1 lb lasagna noodles
  • olive oil

Step 1

1. Boil the lasagna noodles.

2. Boil the frozen spinach, drain and return to the pot. Add the fresh spinach, nutmeg and garlic. Stir and set aside.

3. Beat the eggs thoroughly and stir into the ricotta.

4. Assemble the lasagna. Oil a 9x12 (or larger) baking dish. Add one layer of noodles to create a solid base. Next add a thin layer ricotta (roughly 1/5 of the mix). Then spinach (again, roughly 1/5), mozzarella and sprinkle with parmesan.

5. Create 4 to 5 more layers. Lay noodles lengthwise and across, alternating by layer. On the top, lay a solid sheet of noodles, smear with olive oil and dust with parmesan.

6. Cook at 350F for 1 hour.
