Ingredients
- 6 large russet pot. peeled and cut into 1/2 in cubes
- 1 1arge onion. chopped
- 3 can chix broth with roasted garlic
- 1/4 cup butter
- 2 1/2 t salt
- 1 1/4 pepper
- 1 cup 1/2 1/2
- 1 cup shredded cheese
- 3 T chopped fresh chives
- 1 8oz sour cream
- 4 bacon slices, cooked chopped
- shredded cheese

Step 1
combine first 6 ingred. in crock pot..cover and cook on hight 4 hours or low 8 hours..until potatoes are tender...mash mix until potatoes are coarsely chopped and soup is slightly thickened..stir in 1/2 1/2,cheese and chives..top with sour cream..sprinkle wih bacon and cheese
