Tuscan Salmon

Ingredients
- 4 (6-oz.) salmon steaks
- 1 t salt
- 1 t ground mustard
- 1 t crushed dried thyme
- 1/2 t ground black pepper
- 2 t honey
- 3 t olive oil, divided
- 8 cups spinach leaves
- 1/2 t minced garlic
- 2 cups halved red seedless grapes
- 1/2 cup dry red wine
- salt to taste

Method:
Combine salt, ground mustard, dried thyme and pepper in a small bowl; mix until well blended. Rub the salmon steaks with honey and sprinkle with the seasoning mixture. Reserve the remaining seasoning mixture.
Heat 2 t olive oil in a nonstick skillet. Brown both sides of the salmon steaks in skillet. Toss spinach and minced garlic with the remaining 1 t olive oil in a 13-by9-by 2-inch baking dish. Place the salmon on spinach leaves; cover loosely with aluminum foil and bake in 300˚F oven for 10 minutes.
Sauce Sauté the seedless grapes in the skillet used to brown the salmon. Add the red wine; bring to a boil. Season to taste with the remaining seasoning mixture and salt; heat until reduced by half.
Serve salmon on spinach; top with grape-sauce mixture.
