- 2 oz Shallots, chopped
- 14 oz Dry white wine
- 1 3/4 pt Fish stock
- 14 oz Heavy cream
- 4 oz Butter
- 1 1/2 oz Chopped parsley
- to taste each Salt
- to taste each Pepper
- 1/2 tsp Old Bay Seasoning
- 1/2 tsp red pepper flakes

Step 1

• Combine the shallots and white wine in a saucepan.
• Reduce until almost dry.
• Add the fish stock and reduce by two-thirds.
• Add the cream and reduce slightly.
• Swirl in the butter (monter au beurre).
• Add 3 TLB flour to 1/4 cup water stir until smooth
• Add just enough flour mixture to thicken to your liking
• Add the chopped parsley.
• Season to taste.
