Marinated Mussels

Ingredients
- 3 dozen mussels
- 1 cup dry white wine or water
- 1/4 cup parsley sprigs
- 1 large clove garlic
- 1/4 cup olive oil
- 2 Tbsp. lemon juice
- 2 Tbsp. white vermouth
- 1/4 tsp. salt
- pepper to taste
- lettuce leaves

Step 1
Scrub mussels, removing beards. Steam in basket over water or white wine, just until shells open. Do not overcook.
Discard any mussel that does not open. Remove empty half shell and discard.
Arrange mussels in shells on a serving platter lined with lettuce leaves.
Chop parsley and garlic in blender or processor. Add lemon juice, vermouth, salt and pepper, and blend.
Pour marinade over mussels. Cover and chill for 1 hour.
